This is a true, homemade mac and cheese recipe, that I just LOVE! The flavor is out of this world, and it is still the one I always go to...I know it's a little extra work then a lot of recipes that call for velveeta or cheddar cheese soup and such, but it's totally worth it!

1/2 pound elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon powdered mustard
3 cups milk
1/2 cup yellow onion, finely diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar, shredded
1 teaspoon kosher salt
Fresh black pepper
Topping:
3 tablespoons butter
1 cup panko bread crumbs

Preheat oven to 350 degrees F.
In a large pot of boiling, salted water cook the pasta to al dente.
While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
Temper in the egg. Stir in the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish.
Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.
Remember to save leftovers for fried Macaroni and Cheese!!!

Enjoy!

Baked Macaroni & Cheese

½ cup heavy cream
½ cup milk
3 Tbsp butter
2 Tbsp flour
1 lb. macaroni, boiled al dente, according to pkg. directions
1½ c ups yellow cheddar cheese
1½ cups Muenster cheese

Heat the milk and cream together in microwave. Melt butter in large saucepan, then add all the flour stirring constantly. Let cook for 4-5 minutes, continuing to stir. Remove from heat and add warm milk and cream while whisking -- if sauce is too thick, add a touch more milk. Add cheese to white sauce and stir. (Save a bit of cheese for the topping.) Stir sauce into macaroni and place in a buttered casserole dish. Place in 350° oven until slightly brown and bubbly on top -- 25-30 minutes.

I made this last night....

Boil a bag of noodles for 10 mins. Drain and add 6 tablespoons of melted butter to coat.

Add a small block of velveeta mexican cheese or a can of cheesy soup (for creaminess), a cup of grated fontina or smoked gouda and a cup of parmesan or mozzarella. Add garlic, red pepper flakes, oregano, basil, salt, pepper, cumin, whatever spices you like. Mix well.

Top with crushed croutons.

Bake at 350 for 35 mins.

any box that is "deluxe" cook as box directs, then cut up different types of chees and mix with it and add milk and salt ( little) and pepper. put into a casserole bowl and mix with beaten eggs, about 2 to 3 eggs per box, once you do that, all you gotta do is stir it and bake for a little bit, maybe 15 minutes.
