Currently, I am at Metformin 850mg twice a day and my FBG is runing at around 100 +/- 5 points. I want to see if I can drop my Metformin to 500mg twice a day.

Your FBG can change within 24-72 hours, dpending on your metabolism.
Unless your doctor is authorising and monitoring this experiment, you are playing a dangerous game. No one should modify their medications without discussing it with a specialist.

I would not do that, your FBS is still higher than it should be, but you will see a change in FBS within 48 hours of changing your metformin doseage.
