I have to chop lots of parsley and currently I use a chef's knife with a cutting board and it works great, but it is not a very good way when you have to chop a lot. I have a 5 gallon bucket of parsley to chop. I am going to make tabouli for the homeless. I do have a food processor, but I don't want to use it because it ruins the texture. The vegetable chopper I have gives it he right texture, but it can only chop a handful of parsley at a time and that will take me forever. What would be nice is if I could find a large vegetable chopper that could chop large amounts of parsley at one time.

take 2 french knives, put on some music and start playing the drums,trust me it works. there is a machine called a buffalo chopper look into it, that will save you a ton of time.

The people before me gave you excellent ideas, but I also think that you stilt can use the food processor because some of them coming with different blades, and you can use them, that's works fast, specially the Cuisinart .

Get up very early & you should get it done in time. I'm sure a passionate & dedicated vegan such as yourself who tirelessly works for others won't mind getting up early for the benefit of others, eh Ashley.

lay it all down on a cold flat slippery surface and skate all over it for 45-48 minutes. leave it to develop.
best served chilled

If they are long stalks you can fold or roll them up and it makes the chopping process alot quicker
