I'm not into christmas. Santa or Jesus.
But, since it's a holiday in the middle of winter, we often go out to a restaurant for dinner. Otherwise, it's just another day of the week.
When I was living with my parents, I'd make myself stuffing, scalloped potatoes with cashews, ... um... some other stuff. I wasn't into christmas then either, but made a big dinner for four for myself just to show off to the rest of the family while they ate their turkey and canned cranberry sauce etc.

I had stuffed manicotti (that's a big pasta shell with mixed cheeses and tomato sauce). I also had salad, stuffed mushrooms, breaded baked cauliflower (it's better than it sounds) and sweet potato casserole.
