Most Chinese restaurants use white steamed rice but other than that, it could be fried rice. It sort of a yellowish. Most likely that's what it is. In stir-fry I usally use peppers, onions, broccoli, shredded carrots, pea pods. If you like spice then u can also use a seshezuan sauce. Baby corn might go well with it too.

Most Oriental restaurants use Jasmine Rice. It holds the flavor in better than white rice when being steamed or fried.
I would recommend using carrots,leeks,peas,bean sprouts,and celery.

I don't think it's a special rice....most likely cooked in a broth or water with annato oil....this is a seed that mostly gives color...not flavor, when steeped in oil it turns a bright yellow orange...used alot in Latin/Spanish cooking that I know of......I have seen everything from minute rice to long grain to jasmine in oriental restaurants.....enjoy!

I think they add turmeric, it gives a yellow color with no real flavor. Saffron is very expensive and I highly doubt they use it Chinese stir fried rice dishes. Besides, saffron is not really used in Chinese cooking. Egg yolks may be used but they dont add "color", they get cooked and add flavor. So I think it's turmeric.

It's regular white rice with saffron added to the water when cooking.

Dason K is quite right.

You fry the cold rice and when it's hot you add the beaten eggs and mix fast.
