Buttercream Recipe
1/4cu butter
1/4 cu butter flavored shortening
1 tsp real vanilla(not imitation)
Cream these together thoroughly. Add a pinch or two of salt.preferrably sea salt or kosher salt. I also add a teaspoon of butter flavoring, this & the salt add more depth to the icing instead of just straight sweetness. Next alternate:
4 cups confectioner's sugar
4 Tblsp cold milk(skim or non fat is OK)
Blend, alternating the two ingredients til smooth. I then cover & can be stored for a week or so in the fridge. When you go to use it from the refridge, you need to set out, take the chill off and stir before using. If becomes too stiff(I usually set it out for 1/2 hr -45 min)...add a few drops milk to loosen & if it is too loose, add additional powdered sugar, a few teaspoons at a time ,to desired consistency. It can be colored with either liquid or paste food coloring as needed....Good tip for decorating , use sealable pastic bags with your decorating tips instead of the sleeves, they're disposable & icing contains alot of shortening & butter. This sometimes makes cleaning the re usable sleeves difficult.
I did cakes...wedding,theme,etc ....for many years. This is my spin on the basic buttercream from Wilton. It's great for cakes, cookie fillings, or late nite cravings! Enjoy!

This is the best ever for cinnamon rolls, pumpkin cake or carrot cake especially. It's good on anything!!
Cream Cheese Frosting
8 oz cream cheese - room temp
2 Tbls butter - room temp
1 tsp vanilla
2 cps powdered sugar
Use a fork or a potato masher to blend the cream cheese and butter with the powdered sugar. When it is well blended add the vanilla. If it's a bit to thick add milk 1 tsp at a time till it's the right consistency. If it's a bit to thin add a little more powdered sugar.

Cream Cheese Frosting.
8oz softened cream cheese
1/2 to 1 cup sugar [bakers sugar is best]
1 egg
1 tbsp vanilla
Combine and whip until peaks form.
For a more unique taste try adding one or two of the following:
1/4 cup raspberry jam
6 oz melted white chocolate
substitute half of sugar with caramel [great for spice cakes]
1/8 cup finely ground red hots
4 oz melted dark chocolate
6 oz milk chocolate syrup
note: If you add more than one of the above make sure you decrease the amounts. Your best bet is to make the basic frosting with 1/2 cup sugar and add the extras to taste. The above amount will cover a round cake that is 8 inches in diameter and 4 inches in height. Apply a thin layer of frosting, then refrigerate the cake and the frosting for 45 minutes before you apply the second [final] layer or you will get crumbs in the frosting.

I think my sister makes the best frosting. She uses softened butter, powdered sugar, and a can of condensed milk. Start with a stick of softened butter, and add powdered sugar to the mixer a cup at a time. Add the powdered sugar until it gets pretty thick, then start adding the condensed milk a bit at a time until it is of a consistency that you like. Oh, and some vanilla (or any flavor you like) extract. Yum yum yum, and super easy. No recipe needed! :)

You can ground sugar until really fine. Then beat egg white until the froth makes a still peak. Then gradually add sugar until the wooden spoon can almost stay upright. Hope that helps you. Ciao.
