Everyone who answered "you cooked them too long or used too much liquid" are probably correct.. Next time you roast vegetables ... do it on the top of the stove using a heavy skillet - preferably wrought iron with a grill bottom and over moderate heat. Prep the vegetables to be used separately. Spray with "PAM' or some such aerosol oil. Salt & pepper or whatever you plan to use as seasoning. Turn each seperate vegetable into the skillet and spread out with tongs, Grill for a couple of minutes and turn. You should have nice grill marks. Test a piece and if it is cooked to your liking ... transfer to a serving vessel and cover. Do your next vegetable the same way. Not cooked enough ... grill a little longer turning from side to side. May be time consuming but your dinner guests will appreciate the effort to which you've gone. (OPTIONAL) Toss all grilled vegetables with a little "Kraft" Italian or Greek Salald Dressing for a little added pazzaz. Don't drown your vegetables in salad dressing. Just enough to LIGHTLY coat and be sure the vegetables are hot when served,

Yeah - too much heat too long. Try less liquid and adding the veggies to a hot skillet/pot next time.
Oh - and be very attentive it they are mixed veggies - all vegetables cook at different rates. Carrots take a while and peppers a bit less, Onions are in the middle, and zuchini, squash, and mushrooms can cook very quickly.

Cooked them to long. I do the same thing. the only thing that I find that works is to put them in about half way the roast.. I like my vegy's crispy I normally steam them. I 'm a good cook I have been doing it for almost 40 years

You just over-cooked them. Maybe try putting some oil over them and put them in the oven for a bit to crisp them up.

if they are laying a bottom of a container and not laying on a grill off the bottom of the container, they will lay in the juices of the liquids, thus getting soggy.
