I'm making 2 cheesecakes, but I only have one cheesecake pan. Normally, I just take the ring off the sides and leave the cheesecake on the bottom portion of the pan.

But, how can I slid one cheesecake off of the pan without breaking it. I need to make another one and I only have that pan.

Just bake it in a regular pan and cut it into squares. It was done that way long before spring form pans were invented.

Put parchment paper under the bottom of the pan (hoe you haven't baked the first one). Then use the excess edges to slide the cooled cake off the pan bottom.

For the future, I've seen spare bottoms at thrift stores for a quarter or so... just keep a couple spare bottoms if you dont' want to invest in a 2nd pan.

I'm sure you're running out of time for this before the holidays - but buy some cake rounds from your gocery store bakery counter. Refrigerate (or partially freeze) one cake, take the ring off and put one round on top. With one hand on top and the other on bottom (very carefully) flip it over and take the bottom off the first cheesecake. Put another round on the bottom and reverse.

If you can't get rounds, cut out a couple pieces of cardboard and cover them tightly with aluminum foil (key in this sentance is tightly).

Put a plate under the whole thing. Slide the bottom of the pan away before you completely remove the springform. That may work.

Use any baking pan for the second one and line it with parchment paper and grease the sides well then just lift it out once it has cooled.

You will need one of those big over size metal spatula's by oversize I mean it needs to be at least 6 inches wide.If you don't have one that wide then you are going to need some to help you slide it off .Good Luck
