A classic desert is strawberry jello salad. It is always the first desert eaten at our family parties. In fact, I just made one tonight! The recipe is:
STRAWBERRY PRETZEL JELLO SALAD
2 c. crushed pretzel sticks
2/3 c. melted butter
1/4 c. sugar
12 oz. (1.5 pkgs) cream cheese
another 1/4 c. sugar
1 c. Cool Whip
1 (6 oz.) pkg. strawberry Jello
2 c. boiling water
2 c. cold water
frozen strawberries, partially thawed
Mix first three ingredients and press in bottom of a 9"x13" pan. Bake at 350 degrees (metal pan) or 325 degrees (glass pan) 8 minutes. Let cool completely. Beat 1/4 cup sugar and cream cheese. Fold in Cool Whip. Spread over pretzels and refrigerate. Mix Jello and water until dissolved. Place jello into a different container and refrigerate for an hour and a half. It doesn't need to completely gel, but it needs to be "spoonable." Stir in strawberries and spoon mixture over the cream cheese / pretzel mixture. Chill.

STRAWBERRY MARGARITA ICE
2 cups fresh or frozen unsweetened strawberries, thawed
2/3 cup fresh lime juice
½ to 2/3 cup granulated sugar
1 tablespoon tequila or fresh lime juice
1 tablespoon orange liqueur or fresh orange juice
In a food processor, process all the ingredients until smooth. Pour the mixture into a 9” x 5” x 3” loaf pan. Cover and freeze for 4 hours, or until firm but not frozen solid. Put a large bowl in refrigerator to chill. When the mixture is firm, break it into chunks and put it in the chilled bowl. Using an electric mixer, beat until smooth, but not melted. Serve immediately, or return the mixture to the loaf pan, cover and freeze until serving time.
TIP: If you leave the strawberry mixture in the freezer until it becomes frozen solid, let it stand at room temperature for about 15 minutes before breaking it into chunks and beating with electric mixer.
You can adjust the level of sugar in this recipe depending on the sweetness of your strawberries
and how tart you like your margaritas.
To serve when frozen, scrape across the surface with a spoon and mound the shavings into dessert dishes or martini glasses.
Yield: 6 Servings

This doesn't involve baking, but what we love in our family after a big Christmas dinner is Peppermint Ice cream topped with Hot fudge or Chocolate sauce. Mom serves them up in her fine china and it is Simple and Fail Proof, yet soooo Classy....and a hit!! Usually after a big dinner I would rather have something refreshing and light with a hint of richness rather than something heavy like cake. Have a wonderful Christmas!!

Chocolate Balls
1 cup peanut butter
3/4 cup confectioners' sugar
1 cup graham cracker crumbs
2 cups semisweet chocolate chips
3 (1 ounce) squares semisweet chocolate, chopped
1 tablespoon shortening
In a medium bowl, mix together the peanut butter and confectioners' sugar until smooth. Stir in graham cracker crumbs until well blended. Form the dough into 1 inch balls by rolling in your hands, or by using a cookie scoop.
Melt the semisweet chocolate chips, semisweet chocolate squares, and the shortening in the top half of a double boiler. Use a fork to dip the balls into the melted chocolate, and place on wax paper to cool until set.

how about a trifle... no baking required
You will need
Pound cake or angel food cake
1 large Instant Pudding (prepared)
2 Cans of fruit like peaches, Mandarin oranges or fruit cocktail
cool whip
Cut up the pound cake or tear up the angel food cake and place 1/2 in bottom of a large glass bowl (clear looks pretty if you have one)then layer one can of slightly drained fruit and cover that with 1/2 of the pudding.Repeat layers and top with cool whip. let it chill in the fridge for a couple of hours and enjoy

Get a flourless chocolate cake (aka: chocolate torte) from the freezer section and some raspberry puree or ice cream topping both from your local grocery store. Put a small pool of the puree on your plates before putting thin wedges of the fourless chocolate torte on the puree pooled plates. Tastes great! Looks great! Easy to do.

If this is your first baking experience get some sugar cookie dough from the store and some cookie cutters. Instant holiday classic. You could also try making sugar cookie dough because that's not too hard. Sugar cookies is the main idea though.

EGG NOG PIE
1 1/4 c. egg nog
1 tbsp. Knox gelatin
1 tbsp. water
3 beaten egg yolks
1 c. whipping cream
1 tsp. vanilla
1 pie shell
Nutmeg
Heat egg nog. Dissolve gelatin in water and add to egg nog. Remove from heat and add beaten egg yolks. Cool. Whip cream until fluffy and add vanilla. Fold into eggnog mixture. Add a dash of salt. Pour into pie shell and sprinkle with nutmeg. Refrigerate and serve the next day.

Go with pumpkin pie or apple French bread bake!
Pumpkin Pie
1 egg
14 ounces pumpkin pie filling (no spices added)
3/4 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/8 teaspoon ground cloves
1/2 teaspoon salt
3 tablespoons brown sugar
11 ounces sweetened condensed milk
1 (9 inch) unbaked pie shell
whipped topping
--Beat eggs lightly. Add and mix next 8 ingredients in order given. Pour into unbaked pie shell. Sprinkle top with more cinnamon if desired. Bake on bottom shelf in 450° oven for 10 minutes. Reduce heat to 350° and bake about 30 min or until inserted knife comes out clean. Serve with whipped cream.
Apple French Bread Bake
6 tablespoons butter
8 ounces French bread, loaf (with crust)
1 1/2 cups brown sugar, packed
1 cup water
1 teaspoon cinnamon
2 tablespoons butter
2 large apples
6 ounces cream cheese, 1/2 inch cubes
1 cup walnuts, chopped
whipped topping or vanilla ice cream
--Preheat oven to 350 degrees. Cut bread into 3/4 inch cubes. Place 6 tbsp butter into bottom of a large baking pan. Melt in oven. Add bread cubes and toss to coat evenly. Bake bread until crisp and slightly browned, stirring occasionally (about 20 minutes). Remove bread from oven and raise temp to 400 degrees. Simmer brown sugar, water, and cinnamon in a saucepan until the sugar is dissolved and it is syrupy (about 5 minutes). Add 2 tbsp butter to mixture while hot and stir until melted. Peel and core apples and cut into a small dice. Combine apples, bread cubes, cream cheese cubes, and walnuts. Pour syrup over all and toss to coat. Butter a 9x13 inch dish well. Pour mixture into buttered dish and spread evenly. Bake in 400 degree oven for 40 minutes. If browning too quickly, loosely cover with aluminum foil. Serve warm topped with whipped cream or ice cream!
