I put it in at 2pm hoping to pull it out at 5pm it wasn't done until 7pm. It turned out great.

It's complicated, long, but the recipe below works perfectly! High, fast heat will turn your expensive roast into charcoal, long, protracted low even heat will have you ending with the perfect roast. The high heat at the end of this recipe is to create the crust that we all love.

Trust this man (Alton Brown) - he has yet to steer me wrong on any dish.

ole man hit it perfect, use a temp gauge that you can stick in the roast and monitor on the outside of the oven

about 2 hours should do it at 325 to 350 degrees.
