Citric acid but they are not all sour, some are comparatively sweet and palatable particularly if allowed to ripen on the tree.
These are eaten just like a bitter orange in Mediterranean countries.

Primarily because of their acid content. I think lemons are around pH4.

They have less fructose in them than other citrus fruits like oranges. Fructose is fruit sugar and makes fruti sweet.
