I just chuck 'em in and they seem to be small when I pull 'em out?
Is this normal?

It's normal to a point. You might try putting a makeshift pan under them to catch the drippings and then rolling the whole works (drippings and all) up in foil to let it rest once you're done cooking - any roast needs to rest 10 minutes before you cut into it.

I think your problem is that they are in too long at too low a temperature.

Preheat the Weber to get it very hot. Then turn it to your cooking temperature. Put the cold roast (preferably with a wired meat thermometer stuck in it) into that heated cooker. Then keep it in there only till it reaches the done-ness that you want. Take it out and let it stand for a half hour. It will be more juicy and less shrunken thatn you have been seeing before.

its normal - meat tends to shrink when its cooked as it loses some of its water that it contains. If you want it to come out bigger you either need to cook it less or start with a bigger roast.

Yes, cooking removes fat & water; you can wrap in foil.
