You really can't make that a crown roast - you need more ribs. Usually, Lamb is made into a crown roast because the meat is smaller and allows the cut to be circled into a 'crown' once the ribs are Frenched (that's when they cut the meat off and expose the bone ends). Beef crown roasts are usually enormous - 18lbs and up - and are entire bone-in lipons (rib roasts - call them lipons (lip - ons) with your butcher, he/she might be impressed.)

A crown roast is typically pork. Four ribs is not enough to make a crown roast. If you want any part of your beef roast rare, watch it carefully or use a meat thermometer.

Is it a beef roast or pork? Either one what you do is slice down thru the meat until you are almost all the way thru. When you have cut in between each rib then pull the roast around until the ends meet. Tie with string. Stuff the cavity and cook.

My favorite cut of beef is brisket, slow cooked on low heat.
