Easy Homemade Vegetable Soup:

½ day 5 min prep
6-8 servings

2 (14 1/2 ounce) cans diced tomatoes or stewed tomatoes
2 (20 ounce) cans Veg-All, homestyle (large chunks of mixed veggies)
1 (14 1/2 ounce) can corn
2 (6 ounce) cans tomato sauce (or equal amount ketchup)
1 lb stew meat, cut into chunks (optional)
2 tablespoons cilantro
2 tablespoons dried onion flakes
2 tablespoons Mrs. Dash seasoning mix

Place stew meat in bottom of crockpot, add dried onion and Mrs.
Dash.
Dump in the canned vegetables and tomato sauce, top with cilantro.
Fill the crockpot the rest of the way with water.
Cover and cook on low all day (8 hours or more).

Vegetable soup
1 pack soup mix (the kind that contains dried barley, corn, split peas etc)
dried harricote beans, chickpeas and kidney beans
2 cups vegetable stock (fresh, frozen or make from cubes)
any (and all if you like) of the following, diced into small pieces:
peas
corns
broccoli
cabbage
zucchini
cauliflour
brussel sprouts
green beans
carrot
pumpkin
leak
onion
garlic
basically any other vegetable you can think of. The soup will not last as long if you use vegetables with high starch content such as potatoes though.

Put everything in a big pot. Add enough water to cover everything (remember that the dried beans etc will expand).
Boil for 2 hours.
Top up with hot water and bring to the boil again.
Serve.

Soup will keep in the fridge for a week as long as you bring it out and bring it to the boil every day. Also can be frozen.

If you don't care for kale leave it out and it makes a wonderful bean soup.

Description: A very easy soup to make of onion, kale, beans and tomatoes.
Preparation time:Êabout 1 hour
Serves: 4 to 6
Amount/Measure/Ingredient:

1 tbsp. of olive or canola oil
6 to 8 cloves of garlic ( crushed or minced)
1 large onion, chopped
4 cups of kale chopped if fresh ( you can use frozen 2 or 3 pkgs. or if canned use 2 to 3 cans )
4 cups of chicken or vegetable broth
2-15 oz. cans of white beans, any kind
1 can of stewed tomatoes or chopped fresh tomatoes
1 tsp. dried thyme
1 tsp. rosemary
salt and pepper to taste
1 cup of chopped parsley

Preparation:

In a large pot, heat olive oil then add garlic and onion. Saute these ingredients until soft. Add kale and saute until wilted. Add 3 cups of the broth, 2 cups of beans, tomatoes, herbs, salt and pepper. Simmer 5 to 10 minutes.
Use a blender, or what have you, mix the remaining beans and broth until smooth. I bet you're asking why, it's to thicken the soup. Mix into soup. Simmer for 15 to 20 minutes.
Serve it up in bowls and sprinkle with parsley.

Black Bean Onion Soup-Yumm

2 medium onions, chopped
2 cloves garlic, minced
1 tablespoon canola oil
5 1/2 cups cooked black beans (about 4 15-ounce cans)
7 cups water
1 cup green peppers, chopped
salt, to taste
pepper, to taste
shredded cheddar cheese (optional)

In a skillet over medium heat, saute the onion and garlic in the oil until soft (approx 5-7 min) Combine the onion and garlic in large pot with beans and water Bring to a boil Add the green pepper Reduce heat and simmer for 10 minutes Allow to cool slightly and then puree half of the soup in a blender Return mixture from blender to pot and heat to serving temperature Top with cheese and serve with whole wheat bread or crackers.

Duchess Soup:
Melt 2 tbsp butter or oil in heavy pot, add 2 tbsp flour. Add
1 cup each, grated carrots, chopped onions, chopped celery.
You can prepare these in a food processor if you like.
Add 1 cup of milk & 1 cup of water or veggie stock.
Bring to a boil then reduce to simmer, until thickened.

This recipe is great - but I don't pour it through a chenoise (sieve) - I leave all that good, flavorful vegetable fiber in and it makes for a great, home-made texture. Serve with a fresh bagguette from Panera or the like:
