Easy Peppermint Candy Canes:

30 min 15 min prep
10-30 servings

2 cups sugar
1/2 cup light corn syrup
1/2 cup water
1/4 teaspoon cream of tartar
3/4 teaspoon peppermint extract
3/4-1 teaspoon red food coloring

Blend together corn syrup, sugar, water, and cream of tartar.
Stir, dissolving the sugar.
Without stirring, cook until the hard ball stage (265°F).
Remove from burner; add peppermint oil, blend well.
Divide into 2 porions.
In one half, add red coloring.
Pour over greased platters.
Let cool.
When cool enough to touch, pull each apart seperatly.
Form into ropes and twist red with white candy mixtures.
Cut into desired lengths and shapes.

I saw this on TV a few weeks ago. The sugar and corn syrup are blended on something that looks like a taffy puller. This is after there are two batters made, one with the peppermint, and the other with the plain candy.
Then it is taken off the roller and made into a braid, cut and hardened into canes.
I saw it on "Good Eats". You know the show that shows how treats and certain brand name things like Twinkies are made. I tried to find the video of the show, but it wasn't on there.
'Good Eats" is part of the food network. And believe it or not, the candy canes have vinegar in them. But only a small amount.
