I'm making veal parmigana and am wondering if I can freeze the left over veal? I can freeze the sauce separately but I'm wondering if the veal will be any good once it's frozen?

Yes, if it's properly cooked through.
It'll need to be re-heated properly,
so that the breading doesn't get soggy.

A good rule of thumb, if you can buy it frozen at the super market you can freeze it at home. That goes for certain types of vegetables, etc; also.
