An AC adapter will let you use your camera plugged into an electrical outlet instead of using your camera batteries. The most practical use of this feature is if you download the pictures from your camera directly into your computer, instead of using a card reader attached or built in to your computer. Downloading directly from your camera is the biggest drain you will ever put on your camera batteries. Using the AC adapter instead of the camera batteries will greatly increase your camera battery life.

I agree with fhotoace except on using an AC Adapter in the field. You can always buy a small portable generator or use a DC to AC Converter in your car's power outlet (where you plug in your charger for your cell phone).
