hi all, i was going to make a cheese cake but i only have ricotta cheese...and you need ream cheese! is it possible to replace cream cheese with ricotta? will it affect the cake in anyway?

Italian cheesecake is made with ricotta:

INGREDIENTS
1 1/2 pounds ricotta cheese
2 cups confectioners' sugar
3 eggs
1 1/2 teaspoons vanilla extract
1/2 teaspoon almond extract
1/2 teaspoon rum flavored extract
1 tablespoon grated lemon zest
1/4 cup fresh lemon juice
1 tablespoon grated orange zest



DIRECTIONS
Preheat oven to 400 degrees F (205 degrees C). Grease and flour one 9 inch round springform or regular pan. Drain the cheese thoroughly by squeesing through cheese cloth or placing a coffee filter in a strainer.
Combine the ricotta, confectioners' sugar and eggs. Blend well. Stir in vanilla, almond extract, rum extract, lemon juice, lemon zest and orange zest. Beat by hand until smooth and creamy. Pour batter into the prepared pan.
Bake at 400 degrees F (205 degrees C) for 40 minutes, until golden. Place on a rack and cool.

go get some cream chesse asap unless your planing on grossing out everybody who tries to eat it

ps if you make it with ricotta note that some wont like it at all and some will just go with the cream chesse to be safe so that people wont be in shock when they taste it or tell them its italian chessecake made with ricotta instead of creamchesse

ditto butterfly...you could make the italian cheesecake or go for a similar dessert, ricotta pie...the filling is a lot like cannoli filling...but if you don't have much time, just buy some cannoli shells, drain the ricotta, add some powdered sugar, and fill the shells...looks impressive but really easy.

Yes, that is a popular low carb option, but the texture is gross tome! Grainy and gritty, not smooth and creamy. Go buy some cream cheese, I beg you! ;-)
