I'm making a recipe that calls for half a cup of fresh snipped dill weed. I can't find any fresh dill at the market, so I'll be using dried dill weed (jar of McCormick from the spice aisle.)

Trouble is, I don't know how much dried dill weed to use as a substitute for the fresh snipped. Obviously far less than half a cup, but how much will be enough? Any suggestions?

Dry herbs are 3 times stronger than fresh.

So if you need ½ cup fresh, which is 8 Tbsp, then sub almost 3 Tbsp of dry dill weed.

You would use about 1/3 dry dillweed to 1 part fresh chopped dill called for in the recipe. For exampl, if it says 1 tablespoon fresh dill, start with only 1 teaspoon of dried dill. Depending upon how old the dried is, and your taste for dill, you could go as high as perhaps 1/2 dried, or 1.5 teaspoons. Dried dillweed is not nearly as good as the fresh. Next year, try stocking up on fresh dillweed while it's in season, chop and freeze in 1/4 cup quantities in ziplock snack-sized bags to use in recipes in the off-season. Dill seed has a harsher flavor, and the whole seeds can stick in the teeth. Dill salt hasn't much flavor, in my opinion, and it's too, well, salty when you use enough to for dill flavor.

The statement: "Dry herbs are 3 times stronger than fresh. " does NOT apply to all herbs.
• The difference between fresh and dried dill weed is like night and day. Use fresh for the most intense flavor. If you must use dried, use generously.

• 1 tablespoon chopped fresh dill is the equivalent of 1 teaspoon dried dill weed.

Use 3 to 1 for most leafy herbs, like dill. One teaspoon of dried herb for one tablespoon of fresh. About 3 tablespoons of dried for your recipe.

in using it foe dill pickles how much per pint or just make them brine up how much dry dill?

half a cup sounds like a lot. Can you sample whatever it is you are making and just add it to taste?

Dried herbs aren't as flavorful as the fresh and you usually have to add more.
