I can only think of old school NASCAR personalities. For shear size to fill out the Santa suit (and a bit of gray hair to boot) it would have to be Junior Johnson.
Now for pure jolliness and bringing out the Christmas spirit in all it would be Benny Parsons.

Well, it would have to be one that won't have to put stuffing in the Santa Suit, Junior Johnson, Richard Childress, I've see Jimmy Spencer with a Santa suit before that was a riot. Rick Hendrick has a few extra pounds so he'd do go as well..
