Peanut Butter Fudge Recipe
4 cups sugar
2 cups milk
1/4 stick oleo
1 teaspoon vanilla
1/2 cup peanut butter
1/2 large jar marshmallow cream.
Boil sugar, milk and oleo to soft ball stage, full rolling boil, stirring constantly, at least 10 minutes on medium heat. Remove from heat and add remaining ingredients, and beat till blended. Pour into buttered 9 X 13" pan.
Dark Chocolate Fudge Recipe
3C semisweet chocolate chips
1 can (14 oz.) sweetened condensed milk
dash salt
1C chopped walnuts
1 1/2 tsp. vanilla
In heavy saucepan over low heat, melt chips with sweetened condensed milk and salt. Remove from heat; stir in walnuts and vanilla. Spread evenly into aluminum foil lined 8 or 9 inch square pan. Chill 2 hours or until firm. Turn fudge onto cutting board; peel off foil and cut into squares. Store loosely covered at room temperature.

EZ Fudge
1 (12 oz) bag chocolate chips
1 (16 oz) tub chocolate frosting
1 tsp salt
1 tsp vanilla
Microwave chocolate chips 1-2 minutes or until melted. In same bowl, stir in frosting, salt, and vanilla. Mix together until it loses its glossiness, pour into greased pan, let cool, cut into squares.
Cream cheese or vanilla frosting also works if making multiple recipes, subbing one or two of the chocolate frosting for another flavor.

Five-Minute Fudge
1 (12-oz) bag semisweet chocolate morsels
9 oz (3/4 of a 12-oz bag) butterscotch morsels
1 (14-z) can sweetened condensed milk
1 tsp vanilla extract
1 (8-oz) can walnut halves
1/2 cup (a couple of handfuls) currants
Place a heavy pot on the stove and preheat it over low heat. Add chips and milk and stir until chips are melted and milk combined. Stir in vanilla and remove fudge from heat. Add nuts and currants and stir in immediately. Spread into buttered 9” square pan.
The fudge will set up almost immediately. Chill covered in the refrigerator and slice fudge very thin when ready to serve, a little goes a long way.

My #1 Favorite:
2 pounds Ghiradelli Broken Milk Chocolate pieces
1 1/2 cups coarsely chopped macadamia nuts
Break the chocolate into small pieces and melt in a bowl in the microwave. Stir in the nuts. Pour into greased 9" pan. Cut into bite size pieces after it's chilled.

12 oz bag of Toll House Chocolate Chips
1 - 14oz can Eagle Brand canned milk
dash of salt
2 tsp. vanilla
1/2 cup chopped nuts (optional)
Put all ingredients into bowl in the microwave for approx 1 minute or until choc. chips begin to melt. Remove and stir until fluffy. Spread into 8" square pan that has been lined with wax paper. Chill for 2 to 3 hours. Lift the fudge out of the pan with the wax paper and turn upside down on a cutting board. Remove the wax paper and cut into desireable pieces. Keep in a covered container in a cool place.

Microwave Fudge
3 C chocolate chips
1 can sweetened condensed milk
4 Tbls butter
1/4 c marshmallow creme
1/2 - 1 C nuts (optional)
1 tsp vanilla
In microwave safe covered dish melt chips, butter and sweetened condensed milk, stirring after 2 min and every minute thereafter. Depending on oven's wattage it will take up to 5 mins. Once fully melted add marshmallow creme and vanilla and nuts if using. Stir until fully combined, pour into 8x8 lightly buttered pan. Place in refrigerator and chill until set. Makes about 2 and 1/2 lbs.

Spray a 9 x 13 inch cake pan with PAM (imitation cooking spray)
Ingredients:
16oz Semisweet Chocolate
1 can of condensed milk
2 tablespoons of butter
1/2 Tbsp. vanilla
3 cups of powdered sugar
1/4 teaspoon cocoa powder
two cups of chopped nuts, if desired
Melt chocolate and butter on top of stove in a double boiler. When melting is done, pour in remaining ingredients and mix using a hand mixer. Pour into pan and chill.

1 brick of cream cheese (8 oz)
Microwave 1 1/2 -2 minutes on High
Stir in 3 cups powdered sugar. Put in a 9 x 9 pan and chill.
Don't double this while cooking, but you can pour two batches in one pan.

2-8 oz pkgs.of Baker's brand semi-sweet choc. sq., 1-14 oz can of sweetened condensed milk, 2tsp. vanilla extract, and 1cup chopped nuts. In a microwave bowl put the choc. sq and the milk, microwave on high 2-3 min or until choc. is almost melted, stirring after ea. min.. Stir until choc is completely melted. add vanilla & nuts, mix well. spread into a foil lined 8 inch sq pan. Refrigerate until firm (2 hrs). Cut into 1inch pieces. This recipe is on the inside cover of the Baker's brand semi-sweet baking choc sq. box.

Peanut butter fudge
Microwave for 5 minutes 1 stick butter or margarine and 1 18-ounce jar peanut butter. Mix together and then stir in 1 box of powdered sugar. Spread in pan and let cool.

CHOCOLATE-PEPPERMINT LAYERED FUDGE
1-¼ teaspoons butter, softened (no substitutes)
2 ounces cream cheese, softened
2 cups powdered sugar
3 tablespoons baking cocoa
1 teaspoon whole milk
½ teaspoon vanilla extract
Peppermint Layer:
2 ounces cream cheese, softened
2 cups powdered sugar
1-½ teaspoons whole milk
½ teaspoon peppermint extract
¼ cup crushed peppermint candy
Line 8” square pan w/foil; lightly grease foil w/butter & set pan aside. In small bowl, beat cream cheese. Gradually beat in powdered sugar, cocoa, milk & vanilla extract. Turn into prepared pan. Chill for 1 hour, or until firm. For peppermint layer, beat cream cheese in small bowl. Gradually beat in powdered sugar, milk & peppermint extract. Stir in peppermint candy. Spread evenly over chocolate layer. Chill for 1 hour, or until firm. Turn fudge onto cutting board; peel off foil & cut into squares.
