Put it into an empty container, and then refridgerate or freeze it until it is solid.
Then, throw it away.
Some people re-use for cooking.

I live out in the "sticks". Don't even have garbage pick up. The garbage dump recycles oil from the car and oil from cooking so if you get an empty coffee can with a plastic lid (can even pick them up at your local Thrift store for about 50 cents each). I pour my oil into that can and when it's full, fill another but store them until we head for the dump. Then we pour the oil into the recycle container and toss the cans in the dump site. Easy - you can put your oil, bacon grease, whatever you are tossing in the way of grease or oil. My hubby generally transfers it from the coffee can to an empty laundry soap plastic container (about the size of a 5 gallon paint can) and adds the oil from the cars to it. When it's full, off to the dump we go. So you can go either way. Call your local dump to find out how much it costs to dump the oil.
You can reuse your cooking oil but keep in mind, the more you heat it, the more transfats are in the oil and as you have probably read, transfats are not good for you.

RE:
What is the best way to dispose of cooking oil after deep frying?
Anything like that would clog the drain in the sink. It is too liquid to put in the garbage. If I just poured in outside, it would attract raccoons or other pests.

If you've only used it once, then you can filter it, and put it back into the container to be used again.
Cooking oil (esp. peanut oil) can be used more than once.
After a while, though, it is best to throw it out. My mom always freezes it before she tosses it.
Happy cooking! =)

Restaurants recycle theirs -- it can be cleaned and used for production of biodiesel fuel. Many municipalities will now accept cooking oil for this recycling purpose. Or you can find a friendly restaurant that will accept yours and include it for recycling with theirs.
Don't just dump it down your sink or toilet. It will probably congeal and your plumber's bill will be painful.

DO NOT throw out, frozen or otherwise. Collect it and freeze it until you have at least a quart and do internet search for recycling center that takes, some even pay to accept it.

I've been told the best thing to do is to let is solidify and then throw it in the trash, but I tend to just throw it out before then....
