I cook mine Brest up. I have a covered roaster, I baste from time to time and then for the last hour I take the lid off of the roaster and let the turkey brown. If your don't have a covered roaster make a tent out of heavy duty foil and cover loosely your turkey.You could flip the turkey on it's Brest if you wanted but they are heavy and it really isn't necessary to do that. I like to peal a vidalia onion & put it inside the turkey Yummy! I have been cooking for more than 45 years.

Not sure what size your turkey really is but you should plan on starting the oven at 500 degrees. Rub the skin of the turkey with melted butter and roast uncovered for the first 30 minutes to brown the skin then put foil over the breast, lower the oven to 325. Plan on 20 minutes per pound. Test with a meat thermometer to 180 degrees. Let rest for 30 minutes before carving. Look at mine on my site, it was mine for Thanksgiving this year. Crispy and delicous! Enjoy!

You cook it breast up. As it turns golden brown, cover with foil to prevent burning. When the legs pull off easily, it is done. After it is done, THEN you turn it over and let it "rest" for another 10-15 minutes prior to carving. This puts the juices where you want them. Eat up!

I cook mine breast down until the last hour. If you don't feel like flipped the bird cover the breast, not the legs and thighs with foil till the last hour.

I would try it breast down first then breast up to make it golden, If you do it breast down first it will be juicier and more moist as the juices will gather at the bottom of the bird.

I start mine breast down and turn it up about half-way through. That way the breast doesn't dry out.

my dad is a chef and i swear his turky is the best ever!
when we do it you prepare it however you like and then wrap the whole thing in foil nice and tight. then put it (breast up) in the oven and leave it on about 200c for hours and its stays moist and cooks nice and evenly.
