I would suggest maybe going to an English speaking country first...unless you feel comfortable speaking another language.
Knowing the local lingo can really save on stress.
I live in New Zealand, which of course speaks English as does Australia...ok the "seem" like a long way away..but us Kiwis have to travel an average of 10hrs to go anywhere apparently!!! ( so a 24hr flight to the UK while it seems daunting is not THAT bad and you can sleep a lot of it too!)

Plan, plan and plan!!! ...Look at whats on offer and look for the kinds of things you like to do....as you only have a week, I would suggest staying in only 1 or 2 places....moving from A to B wastes time on a short trip like this and can be stressful.
What do you want in your trip....a city, beaches, wilderness and nature???????? See at what places will offer you the most of these things and plan your trip to try and include them by doing research....
Preplan some things like accommodation and maybe a day trip or something and have some flexibility to do something you won;t hear about until you are there!!

It depends on what kind of thrills, photography, and sightseeing you want to do. If you are looking for PARADISE, go to HAWAII. The islands have sooooo much to offer in all three categories.

A week isn't going to give you much time to see or do too much. You might want to consider staying fairly close to home territory so you're not spending a lot of time travelling to get there.
