I have been baking today and have 7 yolks. any ideas?

Those yolks would be perfect for Bavarian Cream!!! You can put the bavarian cream in a Trifle between the layers of cake with a layer of either fruit, canned cherry pie filling, canned apple pie filling, or lemon pudding with cool whip and toasted nuts and coconut on top. Or, use it to fill Eclairs or Cream Puffs along with the whipped cream.

It's really wonderful stuff and will use up the yolks nicely.

Or save them and add them to your next batch of scrambled eggs if you don't have a cholesterol problem. Also good in Hollandaise sauce over a poached egg on an English Muffin. Or again the Hollandaise sauce over a steak or asparagus. Lots of good things there. You could even make Lemon Curd for future Scones.

Chocolate Mousse
4 large egg yolks
1/4 cup sugar
1 pinch salt
3/4 cup heavy cream
2 tablespoons cocoa powder
2 ounces bittersweet chocolate
--Finely chop chocolate. In double boiler, whisk yolks, sugar and salt until sugar has dissolved and mix is warm to the touch. Off heat, quickly whisk in chocolate and cocoa. Cool to room temperature. Whip cream until soft peaks form. Whisk half of cream into chocolate. Fold in rest. Divide mousse into 4 ramekins and chill overnight.

1 1/4 cups white sugar
3/4 cup butter, softened
1/2 cup eggnog
1 teaspoon vanilla extract
2 egg yolks
1 teaspoon ground nutmeg
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
--Preheat oven to 300°F (150°C). Combine flour, baking powder, cinnamon and nutmeg. Cream sugar and butter until light. Add eggnog, vanilla, and egg yolks; beat at medium speed with mixer until smooth. Add flour mixture and beat at low speed until just combined. Do not overmix. Drop by teaspoonfuls onto ungreased cookie sheet 1 inch apart. Sprinkle lightly with nutmeg. Bake 20 to 23 minutes until bottoms turn light brown.

3/4 cup sugar
1/4 cup cornstarch
2 1/2 cups milk
1/2 teaspoon salt
3 egg yolks, slightly beaten
1 tablespoon butter
1 teaspoon vanilla
--In medium double boiler, cook sugar, cornstarch, milk and salt. When mixture begins to thicken, add part of mixture to egg yolks; mix well, then pour egg mixture back into mixture in double boiler. Cook until thick; take off stove, then add butter and vanilla. You can use as pudding and top with Cool Whip or use pudding with bananas for banana pudding You can also add 2 unsweetened chocolate squares at the beginning and make a chocolate pie or pudding. For butterscotch pie or pudding, use 3/4 cup light brown sugar firmly packed and 1/4 cup sugar instead of 3/4 cup sugar, then cook as directed.

Or use them for French toast or here are thousands of other choices!

Try making a creative salad dressing. Add some salt, pepper, and olive oil. Or even try adding them to a sauted veggie!!
