I really wanted a chuck roast but the grocery store was out of them. The butcher said I could cook it like a chuck roast (pot roast) but I'm not sure. It looks just like a boneless chuck roast.

I use sirloin tip for pot roast.
Dredge roast on flour seasoned with garlic powder and black pepper. Heat olive oil in dutch oven and quickly brown all sides of roast.
Add a coarsly chopped, large onion, 3 - 4 cups of water and bring to just a boil, reduce heat, cover and simmer for 2 1/2 to 3 hours.

About an hour before it is ready, add peeled, sliced carrots and peeled, quartered white potatoes. Cook until vegetables are fork tender, but still firm.

Remove roast and vegetables from pot, keep warm. Thicken gravey. Slice roast arrange vegetables around meat and serve with the gravey on the side.
