I'm making a meatloaf tonight but I have no eggs. Do you think I need to add anything to substitute for eggs...will it turn out okay? Would adding cheese to help hold it together, since that's what eggs usually do? Thanks!

I have made it without eggs-without a problem. Here's a few suggestions:

Add 1 cup of mayonnaise per 3 lbs. ground beef. Mayonnaise will help it bind. Use Hellmans, as it is real mayonnaise.
A twist on this is to use horseradish sauce (a mix of horseradish and mayonnaise). The flavor is really good.

Another idea: If you are using 85/15 or 80/20 (meat/fat ratio) ground beef, add one third more bread crumbs than usual. This will also help it bind. If the fat ratio is less than 10%, this probably won't work.

Adding cheese will not help it bind, or at least while it is warm. I've never been a fan of cold meatloaf. I do, however, "stuff" meatloaf with mozzerella. The kids love it! And I always put some parmesan cheese in the meatloaf mix.

Yes, you can just use the egg white, or you can go buy some eggbeaters. Eggs are actually NOT necessary to make a good meatloaf. You can use 1/2 cup applesauce if you want as that will work in place of the egg. Anyone who don't believe it really should try it...

You really don't need the eggs. If its a basic recipe that doesn't have a lot of bread in it it should be fine.
Here is one to try:
1 lb ground beef
1/4 cup ketchup
1/2 packet french onion soup mix
3 slices of leftover bread, torn to small bits (use heels if you got them)
1 teaspoon of Italian seasoning
salt and pepper to taste
2 tablespoons of water
Mix all ingredients except beef in a bowl and let sit for 5 minutes. Add the beef and mix well. Shape into a loaf in a baking dish or press into a 9x5 loaf pan.
Cook at 400 for one hour approx. Baste with additional ketchup if desired.

I make a seafood stuffing using mayonnaise and bread crumbs. Lots of people think mayonnaise will "break" when it's heated..but it doesn't. Add 1/2 cup of bread crumbs and 1/4 cup of mayo..you'll be surprised.

I used a half a bag of crushed up croutons soaked for about 2 minutes in 1/2 a cup of milk and it turned out great!
