Software emulation is backward compatibility using software instead of hardware. A programmer needs to write the program for that game if it's to be backward compatible. Ever heard of ROMS or MAME? Those are software emulation.

You don't need to get software emulation for the 20 gb to play PS3 because it already has the hardware to play PS2 games.

To charge the hard drive, you just take it out and put in a new one.

Software emulation is used only in 80GB and PAL 60GB versions (they don't have Emotion Engine - PS2's CPU, so it's emulated via software). NTSC 60GB and 20GB don't need that since they have that chip. Those versions have the best backwards compatibility (97% of PS2 games run).
As for HDD change - refer to the PS3's manual - it's very easy. Any 2.5" SATA 5400RPM HDD will do the job (the same kind is used in most of the laptops). Slightly faster 7200RPM will work too, but Sony recommends using 5400RPM ones.

The 20GB PS3 plays PS2 games ! To swap your hdd, just go to buy.com or a similar and look for SATA's you'd like.
