Since it was the stable of of a Baker [Bait Lehem, aka Bethlehem translates as House of the Baker, by the way], there would have been cows and sheep there and, maybe some chicken. Perhaps even the family's dog or cat.

Who knows there was nobody was recording it and we do not know when he was born if he ever was. Also he was not born in a stable this is a mistranslation. The inn's at that time consisted of one room with a sleeping platform and the animals were kept in the same room but on the floor not on the platform. The name for an in was the same as the name of the platform.So if Mary and Joseph did go to an inn in Bethlehem, and that is a doubtful story, what probably happened is that there was no room on the platform so they had to sleep with the animals but they would not have slept in a different building such as we know a stable to be
