i built one for my physics class but it was only about 9 feet tall...you can go on google and find kits and plans to make all sorts of sizes and types...you wont need it to be too big to only shoot a baseball

Yes, there are people who know how to build trebuchets like the originals. Most recently one was built in England, at Warwick Castle (dozens of YouTube clips of this), by a Danish gentleman named Peter Vemming. There is also a Frenchman named Renaud Befeyte who builds medieval (not Renaissance) siege engines.

The trebuchets used for Punkin Chunkin are generally not very traditional, though they are impressive in their own way. They were built for a different purpose.

one of the funnest, modern uses of catapults and trebuchets is the 'Punkin Chunkin' contests. These contests build devices to throw pumpkins as far as possible. Some are compressed air cannons, but a lot are modern homebuilt catapults and trebuchets.
If you start at the punkin chunkin website http://www.punkinchunkin.com/
you can see some examples. maybe from there you can link to the builders website. Everyone likes to talk about what they've built.
