Storing cheese: Firm, semifirm and semisoft cheese should be wrapped airtight in a plastic bag and stored in a refrigerator's warmest location for up to several weeks. Fresh and soft-ripened cheeses should be tightly wrapped and stored in the refrigerators coldest part for no more than 2 weeks. If mold appears on firm, semifirm or semisoft cheese, cut off the offending portion. Moldy fresh or soft-ripened cheese, however, should be thrown out.

After you open cheese put it back in the fridge in an air tight bag.The good think about cheese is if you see mold growing on it you just cut that bit off and still use the rest.

Store it in a plastic bag. Make sure not all of the air is completely out cuz cheese needs to breathe.

I use a vacuum machine. It seals everything off real well and cheese keeps in the fridge for months
