We call this recipe Chocolate Crazy Cake. It's super easy, yummy, and very moist; and for the frosting you can go with store bought or make the glaze. Then go crazy decorating for the holiday to make it more special.
If you bake it as a cake, you have to serve it from the pan you bake in. It won't flip out to put on a platter. The last few times I've made it, I made it as cupcakes. Nicer to present and serve and kind of fun.
Cake:
1 1/2 c flour
1 c sugar
3T cocoa
1 t salt
1 t baking soda
1 T vinegar
6 T vegetable oil
1 t vanilla
1 c cold water
Preheat oven to 350.
Combine all dry ingredients in a bowl. (You can do it directly in the cake pan but I find it's messy to stir). Add wet ingredients and mix to combine.
For cake, put in an UNGREASED pan. (I use 9x13) For cupcakes, fill liners 3/4. Bake about 25 minutes or until toothpick test is clean. For cupcakes test them after 15 minutes.
Let cool completely before icing. Use any frosting you like, the original glaze recipe follows. For a 9x13 cake I double the recipe.
Icing:
1 1/2 c powdered sugar
2 T cocoa
1/4 t salt
2 T butter
2 T hot strong coffee
Put butter in bowl first and pour coffee over to help it melt. Combine all ingredients and whisk together. Then spread on cake.

You can shape this up any way you like. Basic no bake cheesecake recipe. Five to ten minutes prep, ready to eat within an hour of prep, and freezable if you want to get a leg up.
You start with graham crust, or make one with butter and crumbs, fitting into the pan of your choice. If you make a different size cheesecake, remember to make more filling. These amounts are for ONE 8 in graham crust.
Then you soften and whip 2 bricks of cream cheese, and you can use low fat or fat free if you like. Any brand, I use Great Value from Walmart.
Then add any number of things.
If you add bits, you need to sweeten it a little, and if you sweeten add some milk to cut the graininess of the sugar. Bits, meaning any type of chocolate chips, heath bits, oreo crumbs, etc.
If you use goop there is no need to sweeten because the mix-in combines thoroughly with the cream cheese and it will be sweet.
My fav is to use pudding, mixed for pie filling instructions. 2 small boxes per crust. My fav flavor this time of year is Jello's pumpkin spice. Another fav is a 13 oz jar of Nutella. You could also use peanut butter, preserves or jam, fruit topping, maple syrup, caramel sauce or any other ice cream sauce.
This is so good and so easy, and you can control the price by choosing store brands and inexpensive flavorings.

1. 1 (29 ounce) can sliced peaches
2. 2 tablespoons butter, melted
3. 1 pinch ground cinnamon
4. 1 pinch ground nutmeg
5. 1 tablespoon cornstarch
6. 1/2 cup water
7. 1 cup milk
8. 1 cup white sugar
9. 1 cup all-purpose flour

1. Preheat oven to 350 degrees F (175 degrees C.) In a large bowl, combine sliced peaches with juice, 2 tablespoons melted butter, a pinch of cinnamon and a pinch of nutmeg. Dissolve cornstarch in water, then stir into peach mixture; set aside.
2. In another bowl, combine milk, sugar, flour, baking powder and salt. Beat until smooth - mixture will be thin.
3. Melt 1/2 cup butter in a 9x13 inch pan. Pour batter over melted butter. Spoon peaches over batter. Sprinkle top with additional cinnamon and nutmeg.
4. Bake in preheated oven for 1 hour, or until knife inserted comes out clean.
Yield: 18 servings

How about a cheeseless cheesecake?? You need: 1 ready made graham cracker crust, 4 eggs 1 can condensed milk, 1 tsp vanilla ,and 1/4 cup lemon juice. Mix all ingredients and pour into crust. Bake in a 350 degree oven for 30 minutes. Turn oven off and leave in the oven for 1 hour so it can finish setting with remaining heat. When it is completely cooled remember to refrigerate . PINEAPPLE DUMP CAKE
2 c. flour
1 1/2 c. sugar
1/2 tsp. salt
2 tsp. soda
1 can crushed pineapple
2 eggs
FROSTING:
1 stick butter
1 sm. can evaporated milk
1/2 tsp. vanilla
2/3 c. sugar
In bowl dump flour, sugar, salt and soda. Mix with spoon. Add pineapple and eggs. Stir, do NOT beat. Pour in 9"x13" pan. Bake at 350 degrees for 30 to 40 minutes.
FROSTING: Cook butter, evaporated milk, sugar until thick and add vanilla. Spread on cooled cake
Note: you can also dump a can of cherry pie filling in it to make it a Christmas cake.

Basic Trifle
1 pre-made cake
2 instant pudding mix
2 (1 lb) bags frozen fruit or fresh fruit
1/3 cup sugar
1/2 cup whipped cream
additional fresh fruit (to garnish)
1/3 cup sherry wine or juice or water
Prepare pudding or custard according to directions and let cool. Mix the fruit with the sherry. Cut the cake into 1" chunks and place 1/2 of the chunks in the bottom of a trifle bowl.
Layer 1/2 of the fruit on top of the cake layer and top with 1/2 whipped cream. Repeat layering. Top with whipped cream and garnish with fresh fruit. Chill well before serving.
Variations:
To make a low fat trifle, use angel food cake, fat-free pudding and low fat whipped cream.
Strawberry Shortcake Trifle- Yellow or Angel food cake, custard and strawberries.
Black Forest Trifle- Chocolate cake, raspberries and custard.
Tropical Trifle- Angel food cake, mixed pineapple, mangos, papayas, vanilla or lemon pudding. Sprinkle with shredded coconut.
Apples and cream Trifle- Spice Cake, Apple pie filling and custard.
Banana Creme Trifle- White or chocolate cake, Sliced Bananas, Custard.

Apple Cake
4 cups diced apples
2 cups sugar
1 cup raisins
1 tsp salt
1 cup oil
2 eggs, beaten
1 cup walnuts
2 cups flour
2 ½ cups apple juice
2 t baking soda
2 t cinnamon
Mix apples, sugar, raisins, salt. Let stand 1 hour
Add oil, eggs and walnuts.
Sift in flour, juice, baking soda, cinnamon and salt.
Pour into greased cake pan, 350 degrees for 1 hr and 15 minutes.
Let cool 15 minutes before serving.

get a white cake mix & mix according to package instructions, separate into two bowls, mix in red food coloring to one, green in the other, then pour into 2 prepared pans & bake. When cool, stack the two halves, frost with white frosting & decorate with cookie decorations.
