might have an air pocket or the water pump is dying

You were driving on the highway, the thermostat was open correctly. Lost heat, then overheated...... first I look for loss of coolant. If the radiator (not the overflow jug) is full, it could well be the impeller came off in the water pump. If the radiator is not full, fill and run the car looking for water falling to the ground, Check the right hand floorboard for wet, if the heater core is leaking it often falls inside there. Find the leak and repair.

The car is a 1996, that is 11 years old. Are all the hoses original? They most likely need to be replaced if so. If the heater core is out, you can bypass until it can be fixed by rerouting the hose, but it means no heat or defroster at all. Not good in northern climes.

It sounds like the water pump has gone out which causes a loss of coolant and so the loss of heat/overheat.
Also check the intake manifold gaskets. They can allow the coolant to either leak into the oil or into the combustion chamber to be burned.

have you checked the cooling system for leaks? do that first, lose of coolant explains your problem.
