i'm making it for christmas dinner, but i lost my recipe. we're having about 10 people.

Here's my sister-in-law's recipe. She makes it every Thanksgiving. Any leftovers reheat well in the microwave. This recipe should serve 10. We prefer it in a rectangular dish with lots of surface area, so everyone gets topping. But it can be done in a 2 quart round casserole as well.

Sweet Potato Souffle

4 to 5 cups mashed sweet potatoes (bake and then mash)
1 cup sugar
2 eggs
3/4 stick of butter - melted
1/2 cup milk
1/2 tsp. nutmeg
1/2 tsp. cinnamon
Mix all of the above together and pour into dish. Bake at 400 F for 20 minutes. Spread topping over potatoes and return to oven for 10 minutes.

TOPPING - combine listed items in small bowl
3/4 cup crushed corn flakes or Special K
1/2 cup pecans - finely chopped
3/4 stick butter - melted
1/2 cup brown sugar

This recipe should serve 10 people with all the other side dishes or it can be doubled.

They basically all involve adding brown sugar and butter.

Lately I've gotten the same "taste response" from a quicker method than the old peel/steam or boil/mash/ bake in a casserole method.

I pierce the SP's and microwave on a paper towel. About 7-9 minutes for a medium potato/ 10-12 for large. Add 2-3 minutes for each additional potato and turn 1/2 way through the cycle. Test with a fork [tender]

Holding on to the hot potato with a dish towel or oven mitt, I scrape the insides into a suitable casserole. Generally, the consistency is soft enough that I don't have to mash; just whip with a fork.

I add some butter and b-sugar while whipping, then stir in some cinnamon, vanilla and freshly grated nutmeg [salt to taste]

If you want the marshmallow topping [I don't] you can add to the top and bake @ 350 until they melt/brown.
If your casserole will withstand a broiler, then skip the bake for the Marsh. [or use a "torch" if you have one]

On occasion I might also add 1/4 cup warmed cider/ apple juice while whipping.

This method will save you a lot of time and work.

NOTE: "Dotty R's" recipe is the traditional laborious method
If you add that much butter, you can make coffee grounds taste good. It also makes a fine laxative for your guests.
A couple of "pats" per potato is sufficient.
One wants to enjoy the flavor of the potato.

If you have several side dishes don't use more than 3 lbs. sweet potatoes. Cook them in water til a fork goes in easily, maybe 45 min or so. When you can handle them, peel them and put them in a bowl to mash with a hand masher. Add some (1 tsp.) vanilla, 1/3 cup brown sugar, about 2TBL maple syrup and some butter. Mash it all together. If it seems too thick add a little milk. Put the mixture in a baking pan or dish and bake at 350 for about 30 minutes. Spread some miniature marshmellows over the top and put back in over til they brown. I have made this dish a lot and everyone seems to enjoy it.

the best mashed sweet potatoes

3 medium sweet potatoes (3 pounds), scrubbed
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup low fat milk
Sea salt and freshly ground black pepper
1/4 cup sun-dried cranberries
1/4 cup fresh orange juice
1 tablespoon maple syrup

Directions
Preheat the oven to 375°F
Roast sweet potatoes on a baking sheet for 1-1/2 hours
Turn the sweet potatoes once to ensure even cooking
Meanwhile, in a small saucepan, heat the milk, but do not boil
Add the cranberries, orange juice, cinnamon, nutmeg, and salt and black pepper to taste
Set aside.
When the sweet potatoes are done, remove from the oven and let them cool for 15 minutes.
When cool enough to handle, remove the skin
Pass the sweet potatoes through a food mill or mash in a bowl with heavy-duty wire whip.
In a bowl, combine the milk mixture with the sweet potatoes and mix with a large spoon.
Season with salt and pepper.
Add the maple syrup and serve warm.

MMMMMMMMMM...that recipe above sounds yummy!!

As for my mashed sweet potatoes, I take the easy route. I use canned yams and use the electric mixer to beat them up. I add a bit of orange juice, brown sugar, cinnamon and nutmeg, a bit of softened butter, and a touch of cream or milk. My mom adds an egg or two to hers depending on how many cans of potatoes she makes and this gives them a custard type consistency after they bake.

Then, once they are all mixed together I stir in some miniature marshmallows. As these bake in the oven the marshmallows melt and add to the sweetness.

I bake them at 375 until they are heated through (30+ minutes). Then, I take them out and give them a top layer of mini marshmallows and continue to bake until they are toasty.

As you can tell, I like my sweet potatoes SWEET! :)

I boil my sweet potato's until tender, drain well than mash
add:
1/2 cup sugar
1/3 cup brown sugar
1/4 cup corn syrup
1/2 stick butter
1 tsp vanilla
1/2 tsp cinnamon
1/3 tsp nutmeg
1/3 cup evaporated milk
mix well pour in to casserole dish bake in oven350 for 15 min
after 15 min add mi nature marsh mellows and allow to brown slight take out oven and let cool
