Baked Sweet Potatoes are wonderful to serve with either meal, as are the following recipes.
ASPARAGUS WITH ORANGE SAUCE
2 lb. fresh asparagus, trimmed
1/4 C. plain nonfat yogurt
2 Tbsp. light mayonnaise
2 Tbsp. orange juice
1 tsp. grated orange peel
Dash cayenne pepper
Orange slices and additional orange peel (optional)
Place asparagus and a small amount of water in a skillet; bring to a boil. Cook for 6-8 minutes or until crisp-tender. Meanwhile, combine yogurt, mayonnaise, orange juice, peel and cayenne. Drain asparagus; top with orange sauce. Garnish with orange slices and peel if desired. Makes 8 servings.
BROCCOLI CASSEROLE
2 (10 oz. ea.) pkgs. chopped frozen broccoli, thawed
1 large onion, diced
1 (16 oz.) container sour cream
1 (10.75 oz.) can condensed cream of broccoli soup
2 c. shredded Cheddar cheese, divided
1 (6 oz.) package herb-seasoned dry bread stuffing mix
1/4 c. butter, melted
Preheat oven to 350 F. In a large bowl, mix together broccoli and onions. Stir in sour cream, soup, undiluted, and 1/4 cup shredded cheese. In a separate bowl, toss together stuffing mix and melted butter. Spread broccoli mixture into a 2 quart casserole dish and cover with stuffing mix. Bake at 350 F. for 30 minutes, or until heated through and browned on top. Sprinkle remaining 1-3/4 cups cheese on top and bake an additional 5 minutes, until cheese is melted and bubbly.
GLAZED CARROTS
3 lb. small carrots
3 c. water
1/4 tsp. salt
1/2 c. butter (no substitutes)
1/3 c. packed brown sugar
1-1/2 tsp. snipped fresh thyme
Trim carrots. Combine water and salt in a 12-inch skillet. Bring to boiling. Add carrots and return to boiling. Reduce heat. Cover and simmer for 10 to12 minutes or until carrots are just tender. Drain carrots in a large colander; set aside. Melt butter in the heavy skillet. Add brown sugar and thyme, stirring over medium heat until sugar is melted. Add drained carrots. Bring just to boiling. Reduce heat and cook, uncovered, over medium-low heat, stirring occasionally just until well-glazed, about 10 minutes. Transfer carrots to a serving bowl or platter.
SOUTHERN BUTTERNUT SQUASH CASSEROLE
3 c. butternut squash, cooked and mashed
1/2 c. sweetened condensed milk
2 eggs, beaten
1/2 c. butter, softened
2 tsp. vanilla extract
1/2 c. heavy whipping cream
1 c. white sugar
Preheat oven to 350 F. Butter a 2 quart casserole dish. Blend the butternut squash, sweetened condensed milk, eggs, butter, vanilla, cream and sugar. Pour into prepared casserole dish and bake at 350 F. for 30 to 45 minutes or until set and edges begin to bubble.
Topping (optional): 1-cup brown sugar, 1/3 cup flour, 1/3 cup butter and 1/2 cup chopped nuts. Mix and sprinkle over squash before baking.

This is great with Prime Rib (or anything else) -
Toasted Onion Mashed Potatoes.
Mash ten servings of potatoes as per recipe. Cut 3 large onions into 3/4" chunks. Saute Onions in skillet with 2 Tablespoons butter until onions are brown (about 5 minutes). Mix the potatoes and onions together. They are great with or without gravy, or sour cream. People just wolf them down. For spiral cut ham, I cheat and use packaged potatoes au gratin. I usually add one sliced baked potato a little milk and cheese so I can say I made it my own way.

For spiral ham, I like pinapple casserole. It gives it that sweet tart taste.
One place that I like to search for receipts is Cooks Illustrated. There are free recipes listed also w/o a subscription
This year we are having corn mixed with cream corn, artichokes halves, stuffed mushrooms, green beans, mashed potatoes, Beef roast, Yorkshire pudding, a goose (my in laws favorite) and glazed carrots. As for dessert I am not on that one. maybe an apple pie or chocolate cake.
And this is for 12-14 people that we are feeding.
But those are some ideas on what to serve. I try to have something of different colors and taste backgrounds to go with the main dish.

Chedder Mashed Potatoes:
INGREDIENTS
8 medium potatoes, peeled and cubed
1/2 cup sour cream
1/3 cup butter or margarine, softened
1 teaspoon salt
1/4 teaspoon pepper
1 cup shredded Cheddar cheese
2 bacon strips, cooked and crumbled
1 teaspoon minced chives
DIRECTIONS
Place potatoes in a saucepan and cover with water; cover and bring to a boil over medium-high heat. Cook for 15-20 minutes or until tender. Drain and mash. Add sour cream, butter, salt and pepper; beat until smooth and fluffy.
Transfer to a greased 2-1/2-qt. baking dish. Sprinkle with cheese, bacon and chives if desired. Bake, uncovered, at 325 degrees F for 20 minutes or until heated through and cheese is melted.

ROCK SALT PRIME RIB
rock salt
prime rib roast
½ cup water
Preheat oven to 500 degrees F. Line a roasting pan with foil and cover bottom of pan with rock salt. Place roast in pan and cover completely with rock salt, pressing salt into roast. Sprinkle with water. Roast uncovered 12 minutes per pound. Remove from oven. Hammer off rock salt and serve.
Serves 10 to 12

When my mom makes prime rib, she serves twice baked potatoes with lots of cheddar melted on top, and sliced green onions both in the mashed potato part as well as on top. I think they go perfect with prime rib.

These cheesy potatoes go great with the ham....use a 13 x 9 glass pan
2 lbs. frozen shredded hash browns, 1 can cream of chicken soup (undiluted), 1 pt. sour cream, 1 tennis ball sized onion, chopped, 1 stick butter or margarine, 2 cups shredded sharp cheddar cheese. In a medium saucepan, melt butter, soup, sour cream and cheddar. Stir constantly and then add onion.
Mix with frozen hash browns in a big bowl and then put mixture in the 13 x 9 glass pan and bake at 350 for about 1 hour, uncovered. Yummy.....Merry Christmas

Butter beans or green beans. A tossed salad before the main course. A dish of tomato aspic. And carrot cake with cream cheese frosting for dessert. Don't forget the drink - iced water for everyone; milk for children under ten years of age... Save the wine, mixed drinks or beer for after the meal.
