I would like to meet the Saint Paul and see what he thinks about what the Catholic church does and teaches.

St. Paul for sure.
Nobody (even Jesus on a practical level) did more to spread Christianity. I bet you would run out of beer before you ran out of conversation...even in heaven.
Don't get me wrong, no Jesus means no Paul. But you asked for "saints"

St. Martin of Tours. I admire his act of sharing his cloak, and above all his (less-heralded) decision to leave the Roman Army when war appeared likely, because as a soldier of Christ, he could not serve in a human army at war. (BTW, the Roman Army in peacetime, when he joined, was more of a police force than a fighting force.)
BTW, I'm Lutheran, so I don't know if that makes me Protestant or not. We're sort of swinging in the middle.

going from Saul to Paul, then spending the rest of His life, till he was martyred, spreading the gosped. yep it would be Paul, He went through a lot. I could keep going but i need to
