RICE!!!!

BROWN RICE SALAD

3 c. cooked brown rice
2 (10 oz.) cans tomatoes & chilies, drained
1 1/2 c. fresh broccoli flowerets
1 1/2 c. fresh cauliflower flowerets
1 c. fresh mushrooms, sliced
1/2 c. chopped green onions
3/4 c. sliced pitted ripe olives
1/3 c. olive oil
4 tbsp. red wine vinegar
1 tsp. Italian seasoning
1 tsp. garlic powder

Combine cooked brown rice, drained tomatoes and chilies, broccoli, cauliflower, mushrooms, green onions and olives. In a small bowl, combine remaining ingredients. Add to rice mixture and toss.

chicken cordon bleu is a deep fried dish and is quite heavy on the stomach, to counteract it use a side of mixed steamed vegetables like broccoli, pumpkin, Brussels sprouts, baby carrots etc. If you want potatoes, boil some baby potatoes and pour some melted garlic or dill butter over them.

Spaghetti Olio


INGREDIENTS
16 ounces spaghettini
3/4 cup butter, divided
2 cloves garlic, minced
ground black pepper to taste


DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Melt 1/4 cup of the butter in skillet over medium heat. Add garlic and saute for 2 to 3 minutes; remove from heat. Melt the remaining butter in the skillet with the garlic. In a bowl, combine butter with noodles; mix well. Add pepper if you would like.

Something simple, like peas and carrots with maybe mashed potatoes and gravy. You might also try adding a soup to the menu, such as French onion or cream of mushroom (skip the canned varieties). I have done this on several occasions. The various textures and tastes seem to go well together.

Artichoke Casserole...

4 (14 ounce) cans artichoke hearts, chopped (save liquid from one can)
2 cups Italian seasoned breadcrumbs
1/4 cup olive oil
1 cup parmesan cheese
1 cup romano cheese

Mix Parmesan and Romano cheese, garlic and bread crumbs with olive oil.
Layer artichoke hearts, cheese mixture, artichoke hearts, cheese mixture.
Pour liquid from one can of artichoke hearts over this. Drizzle about 2 tbs. olive oil over casserole.
Bake at 350 for 20 minutes covered and 10 minutes uncovered
4 tablespoons garlic, minced

Green salad or green beans, rolls with butter. Since the chicken is breaded you probably don't want a lot more starches such as rice or potatoes.
