In California...
Just reckless driving unless you fled the police in a reckless manner. Then its a felony.
Either way, you'll be in Superior Court pleading to the man.
You'll lose your license too.
This is all assuming you're not dead after wrecking out on your bike.

Its reckless driving. The officer issuing your ticket will write down how many miles per hour were you in excess of the posted speed limit. Anything over 20 miles per hour is considered endangering the lives of other people on the highway, and the law books (depending on your state) will stipulate anywhere from a 6-month suspension, to a 1-year revoking of your license.
If you've been convicted of this, your PRIVILEGE to drive is over.

I don't work with the law in any way but if someone is caught driving like this, unless they are on a race track, I hope they lock them up and throw away the key. These people get other people killed and don't care about any body else. My son and grandchildren are out on these roads. I would even help spot the driver for them.

If who catches someone? A police officer would pull the person over and give them a ticket. But if you mean a civilian catches another civilian, then I guess you could file a complant about the way someone else is driving, and give the police the license plate number, and the name of the person driving.

It's different in almost every state but, do yourself a favor and pay the ticket, serve your time (depending on the judge) and
get it over with.
