i know it does not have lettece in it. it has marshmellows,coconut,nuts,and cool whip .

MANDARIN SALAD
1 c. sour cream
1 c. crushed pineapple, drained
1 c. shredded coconut
1 c. miniature marshmallows
1 c. mandarin orange sections, drained
1 c. slivered toasted almonds or pecans (optional)
Mix well by stirring gently in order given, except nuts. Add mandarin orange sections last and fold in gently. Chill for several hours or overnight. Add nuts just before serving.

Ambrosia is what you are looking for, and can be used as an appetizer, with dinner, or for a dessert. If using for a dessert, top with whipped cream or cool whip, if desired. (I prefer the marshmallows.) Enjoy!

AMBROSIA

6 navel (seedless) oranges
1 pineapple, peeled, cored, and cut into cubes
1-cup coconut (shredded fresh, fresh frozen, or packaged sweetened)
1 large banana
Mini marshmallows (optional)
1 small (4-1/2-ounce) bottle maraschino cherries, drained well

Peel the oranges, taking care to remove all the white pith. Separate the segments over a bowl or storage container so that you catch any juice, and add the segments to the bowl. Add the pineapple and coconut to the orange slices and gently toss. The ambrosia can be refrigerated up to two days, covered.

When ready to serve, slice the banana and toss it with other fruits. (Add marshmallows, if desired.) Add the cherries last. Makes 8 servings.

Mandarin Orange Salad is great served as a salad or for a light summer dessert.

INGREDIENTS:
24 ounces cottage cheese
2- 4 ounce boxes orange gelatin
2 - 11 ounce cans Mandarin oranges, drained
8 ounce whipped topping, defrosted
1/2 cup chopped pecans, lightly toasted (optional)

PREPARATION:
In mixing bowl sprinkle gelatin granules over cottage cheese. Mix in oranges. Add whipped topping and completely combine. Place in serving container and refrigerate for an hour or so before serving.

Ingredients:

1 lb sm curd lowfat cottage cheese
1 sm pkg orange jello
1 sm can mandarin oranges
1 sm pkg cool whip

Method
Stir jello into cottage cheese. Cut up mandarin oranges and add to cottage cheese. Stir in Cool whip. Chill.
