I just bought a used car from a private seller who would be willing to transfer title in AAA. I know nothing about AAA. Is this legal? Can AAA deal with such bussiness?

Don't buy without a title. Once you have it, signed properly, take it to the DMV and do the necessary transfer. Not the AAA.

Title transfer is the job of the state, usually handled by the county clerk's office or DMV. AAA is a private organization and, if they handle this, would most likely charge a fee.

This has to be done by the state. However, in some states, organizations like AAA have a contract with the state to provide these services. So yes, it may very well be legal where you are.

Most AAA's have a department that handles licensing and registration issues.
Their computer links directly that that of the DMV. The AAA can handle all the details for you and your friend, including licensing sales tax, plates, registration, etc.
in one stop. That's one of the reasons they're there.
