They're wedges, it says to put them in the oven for 18 - 22 mins, but even after 30 mins they're still hard in the middle, is it a good idea to fry them in a wok after it with a little oil, and some cracked pepper and garlic...??

Yes...or seal them in foil and finish cooking in the oven another 30 minutes at 350...check at 15 minutes just to be sure...

I found that I have to have them in the over for 30-45 min depending on how thick they are cut. Yes you can fry them.

Go for it. Add them a few at a time after the wok has heated up, just about a second's passing before adding more. That way they won't stick together like they would if you dumped them all in together at once.

try par boiling them for 4 min. Get a pot of rolling boiling water with a little salt drop in potato' for about 4min. Drain them really well for about 5 min pat dry rub with oil and season, cook for about 20 min. They should turn out alright

45 minutes, flip on the other side of the side you cooked. Add butter on the potato to let it soak for 5 minutes then eat. no need to fry

(BTW Maybe you should check the temperature of your oven in case it's faulty.)
