butter cookies, choc chip cookies and choc muffins? also if i use apple sauce instead of oil, whats the ratio? thank you

Whole wheat flour has a different taste from white. So while it might work in some recipes, it wouldn't work in many.

Now, it looks to me like you're looking for healthy alternatives to 'traditional' ingredients for your recipes. You could use oat flour instead of white. On one of my lists, someone mentioned that you could make oat flour by running oatmeal through a food processor. I think it might even work: When I have oat bran in the house, I will frequently substitute half the flour in the recipe with bran, and my taste buds don't know the difference.

I'm not sure what to say about the apple sauce and oil.

Rice Flour and Wheat Flour both have the same number of grams of Carbohydrate! You are saving yourself 0 calories on the change there. Rice Flour does not have any gluten in it which is necessary to hold the cookies together if not using eggs. Why not just use water or fruit juice instead of milk. It will do the exact same thing and not violate your vegan status. The cookies will be more crumbly not using eggs, but they will be ok.

You can use it, but if the recipes involve liquids like milk or water, then you will probably end up using different amounts. The muffins look like the only ones that have this problem. Just add the liquid slowly until it gets to the right consistency.

Yes, of course. Be prepared for a different texture though. For those of who are allergic to wheat it is a good choice.
