"Blanching" means that you are taking a food item (usually a vegetable of some kind) and you set it in rapid boiling water for a minute or so. After removing it from the boiling water, you set it in ice cold water to "shock it" or stop the cooking process. Blanching locks in the colors/flavors of vegetables. I believe that most commercially prepared vegetables are blanched before being frozen. "Blanched and chopped" means just that ...blanch the items first, then cut them to the appropriate size.

Blanching is dipping in boiling water.

I'm guessing that you're talking about almonds. With almonds, blanching removes the brown skin. You can probably find blanched almonds at the grocery store.

Parboiling would be the next step up - boiling water for a minute or two.

It depends if it pertains to veggies? If veggies you need to put on boiling water for 2-3 min and then directly in to a bowl with ice and cold water. This stops the cooking process and helps keep the bright color to the veggie. Then cut it up.
