For Christmas eve, I'm having a couple of friends over for vegetarian lasanga because I'm a vegetarian. I'm going to do that and a couple of side dishes, and I have time to plan a desert too although I could ask one of them to do it, I would kind of like to make a pie myself, but I do an apple pie every year. Then there is pumkin pie but it's kind of predictable and I'd have to use the canned filling, so it would taste like everyone else's pumkin pie. I don't want fruitcake or anything soaked in booze. I'm a really good cook but I need ideas.

STAINED GLASS CAKE

Prepare 1 (3 ounce) package each of orange, cherry and lime flavored Jello. Dissolve each flavor in 1 1/2 cups boiling water. Put each flavor in a separate 8 inch square pan or dish. Chill until firm. Cut into 1/2 inch cubes. Dissolve 1 (3 ounce) package of lemon Jello in 1 cup boiling water. Add 1/2 cup pineapple juice. Chill until it is slightly thickened. Blend in 1 carton (12 ounce) of Cool Whip. Fold in the Jello cubes. Line a springform pan with lady fingers. Put mixture in pan. Cool in refrigerator overnight. Run spatula around sides of pan. Gently remove sides. This is really easy and Merry christmas to you and yours.

I'd say do a lemon meringue, rhubarb or blueberry pie.

Either that, or do something a little retro and fun like a pineapple upside down cake or a jelly roll.

Fruit Salad. All you have to do is cut it up and dump in together in a large bowl. Use jar(s) of Marachino cherries, can of crushed pineapple, can of fruit cocktail, fresh apples, bananas, cantelope, grapes and/or any other fruit, fresh, frozen or canned, that you like and in whatever quantities you like.
