Spiced Apple Tea
2 c unsweetened apple juice
6 whole cloves
1 cinnamon stick
3 cups water
3 bags cinnamon herbal tea
Combine juice, clove, and cinnamon stick in a medium saucepan. Bring to a boil over high heat. Reduce heat to low; simmer 10 min. Meanwhile. place water in another medium pan and bring to a boil. Remove from heat; drop in tea bags and allow to steep for 6 min. Remove and discard bags.
Strain juice mixture; discard spices. Stir juice mixture into tea. Serve warm with additional cinnamon sticks, if desired.(May also be served cold over ice, or stored and reheated.)
Makes 4 servings
Hot Holiday Punch
4 c apple cider
1 c granulated sugar
1/2 c brown sugar
1 cinnamon stick
12 whole cloves
2 c grapefruit juice
2 cups orange juice
Orange slices(optiona)
Marachino cherry halves(optional)
Combine apple cider and sugars in a large saucepan. Heat over medium heat, stirring until sugars dissolve. Add cinnamon stick and cloves. Bring to a boil over medium heat. Reduce heat to low; simmer 5 minutes. Add grapefruit and orange juices. Heat but do not boil. Strain into heatproof punch bowl. Garnish with orange slices decorated with the cherry halves.
Makes about 8 - 8oz. servings.
Hot Buttered Pineapple Smoothie
5 1/2 c Pineapple juice
1/4 c brown sugar
2 T. butter
10 whole cloves
3 cinnamon sticks
1 sliced lemon
In large saucepan, combine pineapple juice, brown sugar, butter, cloves and cinnamon sticks.Bring to a boil and then simmer for 5 minutes. Remove spices. Add lemon slices. Serve hot in mugs.
Makes 1 1/2 qts.
Maple Hot Toddy
1 c whiskey
1 c pure maple syrup
3/4 c Realemon Lemon Juice from concentrate
Butter and cinnamon sticks, opt.
In medium saucepan, combine all ingredients except butter and cinnamon sticks. Over low heat, simmer to blend flavors. Pour into mugs; dot with butter and stir with cinnamon sticks, if desired.
Makes about 3 cups.
Hot Cocoa Mix
1 c non dairy creamer
1 c nonfat dry milk
1/2 c sugar, more if desired
1/2 c unsweetened cocoa
IN medium bowl, combine ingredients; mix well. Store in airtight container. To serve, spoon 3 heaping Tablespoons mix into a mug; add 3/4 c boiling water.
Makes about 3 cups.
Mocha: Add 1/4 c instant coffee
Mexican: Add 1 tsp. ground cinnamon
low-Calorie: OMit sugar. Add 15 envelopes low-cal sweetner with nutrasweet. To serve, spoon 2 heaping Tablespoons into mug; add 3/4 cup boiling water.

Hot Buttered Cranberry Punch
Ingredients:
16 jellied cranberry sauce
1/3 Brown Sugar
1/4 tsp. Cinnamon
1/4 tsp. allspice
1/8 tsp. cloves
1/8 tsp. Nutmeg
1/8 tsp. Salt
2 Water
2 Pineapple Juice
Butter
Directions:
Crush cranberry sauce with a fork. Mix with sugar, spices and salt. Add water and pineapple juice. Cover and simmer 2 hours. Ladle into mugs and float a pat of butter in each serving.

I made this for a party last weekend and everyone loved it. It is just a bit different from your usual mulled cider. Even people who say they aren't fans of cider gulped it down. I plan to make some more this weekend just to keep on hand.
Hot Mulled Ginger-Spiced Cider
--Cooking Light, Dec. 2005
This recipe is prepared in an electric slow coker, freezing up the stovetop. However, it can be heated in a pot on the stove, if you prefer.
3 whole cloves
2 (1” x 4”) strips orange rind
2 whole allspice
1 (3”) cinnamon stick
1 (½”) piece peeled fresh ginger
12 cups apple cider
1/2 cup apple jelly
1/4 teaspoon ground nutmeg
1. Place the first 5 ingredients on a 5-inch-square double layer of cheesecloth. Gather edges of cheesecloth together, tie securely.
2. Place cheesecloth bag, cider, jelly and nutmeg in an electric slow cooker. Cover and cook on HIGH for four hours. Remove and discard cheesecloth bag.
Yield: 12 servings. (1 cup).

Mixing instructions:

Measure all ingredients into an old-fashioned glass. Place teaspoon in glass; add boiling water to fill glass. (Teaspoon helps prevent glass from breaking when boiling water is added.) Stir mixture and serve immediately
