COLATE CHIP PIE

1 c. sugar
1 c. brown sugar
1 c. flour
2 large eggs, slightly beaten
1 c. melted unsalted butter
1/2 c. coarsely chopped pecans or walnut
1 1/2 c. chocolate chips
1 (10-inch) unbaked pie crust

Mix white sugar, brown sugar and flour. Stir in eggs and butter, combining well. Fold in pecans and chocolate chips.

Spread mixture in crust, and bake at 325°F., 60 to 70 minutes or until a knife inserted in the center comes out clean.

This pie freezes exceptionally well, if it lasts that long.

One stick of butter 1/2 cup of shortening Cream these two items together in your mixer until light and fluffy. Then add: 1 cup of brown sugar 1/2 cup of granulated sugar Cream these into the butter and shortening until all the sugar is mixed in well. By adding more brown sugar and reducing the granulated sugar, you will have a cookie that is more moist. 2 eggs Add eggs one at a time and mix the whole mess until it is fluffy again. Then add these while your mixer is on the lowest setting: 1/2 teaspoon of salt 1 teaspoon of baking soda 3 cups of flour After the flour is all mixed in, add your chocolate chips and any other wonderful add-ins you like. Bake these at 325 until the edges are brown and the middles still are just a bit soft. If you wrap each cookie in plastic wrap when they are just warm enough to handle without falling apart, they will stay moister. I make 3 or more dozen of these each week for the coffeeshope I bake for.

Easiest and good...a large package of Jello brand cooked chocolate pudding and pie filling mix, in a baked pie shell. Serve with a whipped cream topping.
