Trifle if you do it properly.
First step
Jelly roll or cake with jam in cubes in bottom of serving bowl with sherry enough to soak cake - about 1/3 to 1/2 cup.
I use medium sweet sherry - around 6-8 sweetness.

Let that set overnight.

Fruit - strawberries thawed is good. Layer over cake.

Make strawberry jello - set it in fridge til it starts to gel but not set.

Pour Jello over the fruit - at this point the trifle has to go in the fridge.

When Jello is fully set:

Cook custard. That is cook real custard. Birds is good.

When it is cool put it on top of the jello. If it is hot the whole thing will melt. Cover and back in the fridge.

When the custard is fully set cover with whipped cream sweetened with a bit of sugar (1 or 2 tbsp) and touch of vanilla.

If there is moisture gathering on cover or sides of bowl wipe away with paper towel - you don't want water dripping in.

So you have sherry soaked cake and jam. Jello. custard. whipped cream.
Do the cake part the night before. If you start the jello early you can do that the morning of. Just make sure jello is set and custard is cool before it goes over.
Light and yummy and special for Christmas.

You can decorate the top with cherries etc.

Please don't be responsible for another senseless trifle murder.

¾ cup granulated sugar
3 tablespoons unsweetened cocoa powder

Add sugar, 2 tablespoons at a time, beating well after each addition. Add the cocoa and vanilla; beat well to blend. Fold in the almonds. Drop the mixture by tablespoons onto prepared baking sheets. Bake for 25 minutes, or until the meringues are crisp on the outside. Remove from the baking sheets immediately and lt cool on wire racks. Store in an airtight container.

TIPS: Cocoas are different colors and have different acidities nd different tstes. Dutch-process cocoa has less acid than other cocoas, so its taste is mellower. Combine various cocoas to experience different flavors.
