I fry it first, to render it and get some color/flavor on the bottom of the pot. But if you add it raw, it won't be bad.

You can add it raw because it's going to cook when you're boiling the greens. I think frying it first will dry up some of the juices that you need from the meat. I use smoked ham but i never cook it before boiling the greens.

Either way...the point is to get the flavor of the fat into the greens.
Sometimes, when cooking beans or greens, if I am out of bacon, I just add some bacon grease.

You fry the salt pork first, after add your collards greens and water, stir, and cook. You always fry the salt pork. at least that's what I do. Enjoy your greens, now make me want to cook me some collard greens! :) LOL......................

My grandma always takes raw out the freezer and throws it in just make sure you boil um real good.

i prefer to use smoked hocks , but if you don't have them you'll want to fry it slightly first , pour off grease , then add it in
