This one is the best & super easy:

Shredded Beef sandwiches

Get a 2-3 pound chuck roast
1 Packet italian seasoning
Some diced onions
a little mrs. dash
garlic

Let cook for 5-6 hours on low. the longer the time the better. After 5-6 hours or so, pull roast from crock pot and shoudl shredd easily....put back into crock pot for maybe 30 minutes and then serve.

Very simple . My favorite Home made Chili.
in the bottom of the crockpot, put the meat. Add a can of Homel Chili. Than layer it with sliced up onions, beans, can stewed of tomatoes,
put in Salt, Pepper, Parika......
Fill it up with at least 2 cans of chicken buillion. And let it sit and simmer.

Hit the turn on buttom for 6-8 hours . Depending how early you are getting started. I love my crock pot in the winter time.

Remember: Always put meat in the buttom, as it takes longer to cook.

Ham and Scalloped Potatoes
1-2 cup cooked ham, cubed
8-10 medium potatoes, peeled and thinly sliced
2 onions, thinly sliced
1 cup cheddar cheese, shredded
10 ounces cream of mushroom soup
--Layer half of the ham, potatoes, onions and cheese in crock pot. Repeat layers. Spread undiluted soup over the top. Cover and cook on low 6 to 8 hours. Adjust amounts to fit the size of your crock pot.

Sweet and Sour Meatballs
1 (14 oz) jar chili sauce
1 (15 oz) can tomato sauce
1 (32 oz) jar grape jelly
1 (4oz-7oz) can chopped mild green chilies
3 tablespoons dried onion flakes
1 tablespoon garlic powder
1 teaspoon of your favorite curry powder, to taste
1/2 teaspoon dried ancho chile powder
1/4 teaspoon dried chipotle powder, to taste (optional)
2 lbs pre-cooked frozen meatballs
--Put all the ingredients but meatballs into the crockpot and mix well. Add the meatballs and stir to coat well. Put the crockpot on low and let cook for 4 hours on low (if you use thawed meatballs, it'll only take a couple of hours in the crockpot, instead). Serve. *You can use Lil Smokies or sliced smoked sausage instead of the meatballs*
(This may appear to be too much sauce, but a good deal of sauce helps the meat to remain moist)

Crock Pot Chicken Enchilada Soup

chicken meat, cooked and chopped (at least two breasts, but more if you want it)
2 cans enchilada sauce (one mild, one medium)
1/2 cup Pace Picante Sauce (you pick the heat level...)
6 ounces Velveeta
1 t chili powder
1/2 t pressed garlic (about 2 cloves)
OR
1/2 t garlic powder
1 large white onion, minced fine
4 cups chicken broth
1 cup sour cream
salt, to taste
12 corn tortillas cut into thin strips, like noodles

The key word on this recipe is EASY.
Don't bother to sauté the onion and chicken before putting it in the pot. Just simmer them in the chicken broth and chili powder for about 25 minutes before adding the sauces and Velveeta. Simmer 10 minutes more until cheese is completely melted. Once the chicken is done, take it out and cube it, then add the sour cream and adjust the salt to taste.

(I added the sauces, and then went to bed letting it simmer all night. I added the cheese about 45 minutes before serving it and the sour cream about 15 minutes before serving it.)

Add the soft (not fried) tortilla strips just before you serve it. They will begin to dissolve if added too early.
