Original San Antonio Chili
2 pounds beef shoulder, cut into ½-inch cubes
1 pound pork shoulder, cut into ½-inch cubes
¼ cup suet (raw beef or mutton fat)
¼ cup pork fat
3 medium-sized onions, chopped
6 garlic cloves, minced
1 quart water
4 ancho chiles
1 serrano chile
6 dried red chiles
1 tablespoon comino seeds, freshly ground
2 tablespoons Mexican oregano
Salt to taste
Place lightly floured beef and pork cubes in with suet and pork fat in heavy chili pot and cook quickly, stirring often. Add onions and garlic and cook until they are tender and limp. Add water to mixture and simmer slowly while preparing chiles. Remove stems and seeds from chiles and chop very finely. Grind chiles in molcajete and add oregano with salt to mixture. Simmer another 2 hours. Remove suet casing and skim off some fat.
Never cook frijoles (beans) with chiles and meat. Serve as separate dish.

Change to: servings US Metric
2 lbs ground beef
2 cups chopped onions
4 cups beef stock
2 (8 ounce) cans tomato sauce
2-3 tablespoons chili powder
2 tablespoons apple cider vinegar
2 teaspoons worcestershire sauce
1/2 ounce grated unsweetened chocolate or 2 3/4 tablespoons cocoa
2 teaspoons instant minced garlic
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon ground red pepper or cayenne pepper
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1 bay leaf or 1/8 teaspoon bay leaf powder
Toppings
chopped onions (optional)
finely shredded cheddar cheese (certainly NOT optional)
kidney beans (optional)

Ground Beef Chili
Brown ground beef and onion.
Drain.
Add beef stock to beef mixture and simmer 10 minutes.
Add remaining 13 ingredients, simmer uncovered 1 hour.
Remove bay leaf, skim off extra fat.
Serve over hot spaghetti, or hot dogs in buns for chili dogs.
Top with plenty of cheese and other optional toppings.

This is my very favorite chili, made at Waffle House.
Waffle House Chili
2 (15-ounce) cans pinto beans (not drained)
1 pound lean hamburger
1/4 pound breakfast sausage
2 cups chopped yellow onion
1 can (15 ounces) tomato sauce
2 cubes beef bouillon (or 2 tablespoons beef bouillon granules)
1 teaspoon salt
1 teaspoon chili powder
3/4 teaspoon ground cumin
1/4 teaspoon black pepper
1/4 teaspoon sugar
1/8 teaspoon garlic powder
1/8 teaspoon ground oregano
Brown hamburger, sausage and onions together in 6-quart saucepan. Add pinto beans (not drained), add can of tomato sauce and add enough water to rinse can. Add beef bouillon granules. If using beef bouillon cubes, dissolve in 1/4 cup water then add to the pan. Add salt, black pepper, garlic powder, ground oregano, cumin, chili powder and sugar. Blend thoroughly.
Bring to boil, reduce heat and simmer for 15 minutes.

I have a really simple on that always gets great compliments.
15 ounce can of pinto beans
15 ounce can of chili beans
15 ounce can of kidney beans
6 ounce can of tomato paste
2 lbs ground beef
1 onion chopped well
crushed red peppers
black pepper
hot sauce
chili powder
any other seasonings you like
Mix all of the beans and tomato paste in a large pot, DO NOT DRAIN, with seasonings. You can go heavy or light on them depending on the temperature you want your chili.
Add half of the onion to the beans
brown the ground beef in a pan with other half of chopped onion, season as desired, drain. Add ground beef to chili mixture and heat until desired temperature.
Its really simple but everyone I know LOVES it and i have won 2 chili cook offs with it.
This will serve about 8

This is a great Recipe!
--White Chicken Chili--
1 teaspoon lemon pepper
1 teaspoon cumin seed
4 boneless, skinless chicken breasts
1 clove garlic, chopped fine
1 cup chopped onion
2 8 oz.. cans white corn, drained and rinsed
2 4 oz.. cans chopped green chiles, undrained
1 teaspoon ground cumin
2-3 tablespoons lime juice
2 14 oz.. cans white or great norhtern beans, undrained
1/3 cup shredded monterey jack cheese
in a large saucepan, combine 2.5 cups water with the lemon pepper and cumin seed. bring to a boil. add the chicken breast and return to a boil. reduce the heat to low and simmer 20-30 minutes, or until the chicken is fork tender and the juices run clear.
remove the chicken from the pan and cut into tiny pieces. defat the broth, return to the saucepan, and place the chicken back in the stock.
spray a medium skillet with vegetable oil cooking spray, add the garlic and cook and stir over low heat 1 minute (careful not to burn garlic) add to the chicken. then saute the onions in the same skillet, cooking until tender. add the cooked onions, corn, chiles, cumin, and lime juice to the chicken mixture. bring to a boil.
add the beans and simmer until thoroughly heated, about 45 minutes. to serve, place about 1 tablespoon of cheese in the individual soup bowls, ladle hot chili over, and serve.

* 2 pounds ground beef chuck
* 1 pound bulk Italian sausage
* 3 (15 ounce) cans chili beans, drained
* 1 (15 ounce) can chili beans in spicy sauce
* 2 (28 ounce) cans diced tomatoes with juice
* 1 (6 ounce) can tomato paste
* 1 large yellow onion, chopped
* 3 stalks celery, chopped
* 1 green bell pepper, seeded and chopped
* 1 red bell pepper, seeded and chopped
* 2 green chile peppers, seeded and chopped
* 1 tablespoon bacon bits
* 4 cubes beef bouillon
* 1/2 cup beer
* 1/4 cup chili powder
* 1 tablespoon Worcestershire sauce
* 1 tablespoon minced garlic
* 1 tablespoon dried oregano
* 2 teaspoons ground cumin
* 2 teaspoons hot pepper sauce (e.g. Tabasco™)
* 1 teaspoon dried basil
* 1 teaspoon salt
* 1 teaspoon ground black pepper
* 1 teaspoon cayenne pepper
* 1 teaspoon paprika
* 1 teaspoon white sugar
* 1 (10.5 ounce) bag corn chips such as Fritos®
* 1 (8 ounce) package shredded Cheddar cheese
DIRECTIONS
1. Heat a large stock pot over medium-high heat. Crumble the ground chuck and sausage into the hot pan, and cook until evenly browned. Drain off excess grease.
2. Pour in the chili beans, spicy chili beans, diced tomatoes and tomato paste. Add the onion, celery, green and red bell peppers, chile peppers, bacon bits, bouillon, and beer. Season with chili powder, Worcestershire sauce, garlic, oregano, cumin, hot pepper sauce, basil, salt, pepper, cayenne, paprika, and sugar. Stir to blend, then cover and simmer over low heat for at least 2 hours, stirring occasionally.
3. After 2 hours, taste, and adjust salt, pepper, and chili powder if necessary. The longer the chili simmers, the better it will taste. Remove from heat and serve, or refrigerate, and serve the next day.
4. To serve, ladle into bowls, and top with corn chips and shredded Cheddar cheese.
Here is another really good recipe thats much more straightforward.
* 2 pounds ground beef
* 1/2 onion, chopped
* 1 teaspoon ground black pepper
* 1/2 teaspoon garlic salt
* 2 1/2 cups tomato sauce
* 1 (8 ounce) jar salsa
* 4 tablespoons chili seasoning mix
* 1 (15 ounce) can light red kidney beans
* 1 (15 ounce) can dark red kidney beans
1. In a large saucepan over medium heat, combine the ground beef and the onion and saute for 10 minutes, or until meat is browned and onion is tender. Drain grease, if desired.
2. Add the ground black pepper, garlic salt, tomato sauce, salsa, chili seasoning mix and kidney beans. Mix well, reduce heat to low and simmer for at least an hour.

Okay, just prepare the Chili as told in a receipe.
Now my secret ingredients are the spices.
In the center of the pot. Pour in two tsp of oil. Heat the oil, than pour in the following spices
1/3 tsp crushed black peper, 1/3 red paprika, 1/4 tsp cinnamon, 1/4 tsp chinesh five star spice.
Now take a wooden spatle, stir the spices together in the oil til they are heated. You will smell the aroma, than add all the other ingredients.
My personal tip is : The cinnamon adds a kick to it.

Ingredients
2 pounds lean ground beef
1 cup chopped green sweet pepper (1 small)
1 cup chopped onion (1 medium)
4 cloves garlic, minced
4 15-ounce cans red kidney beans, undrained
4 15-ounce cans spicy chili beans
2 14.5-ounce cans stewed tomatoes, undrained - I like to use the ones that are Mexican seasoned
4 to 6 teaspoons chili powder
1/2 teaspoon salt
1 teaspoon Italian seasonings
2 packs of chili seasoning mix - I like to use McCormick hot chili seasoning but you can use 1 hot and one mild if you do not want too much heat
1/2 teaspoon ground black pepper
Shredded cheddar cheese (optional)
Chopped onion (optional)
Dairy sour cream (optional)
Crushed red pepper (optional)
Directions
1. In a 3-quart saucepan cook and stir ground beef, sweet pepper, 1/2 cup chopped onion, and the garlic over medium heat until meat is brown and onion is tender. Drain off fat.
2. Stir undrained beans, undrained tomatoes, chili powder, salt, Italian seasoning, chili seasoning mix and black pepper. Bring to boiling; reduce heat. Simmer, covered, for 20 minutes. To serve, ladle chili into bowls. If desired, top each serving with cheese, chopped onion, and/or sour cream and pass crushed red pepper.
3. Chili for Two: Prepare as above, except divide all ingredients in half.
4. Cincinnati-Style Chili: Prepare as above, except omit sweet pepper, basil, and optional garnishes. Add 2 to 4 tablespoons unsweetened cocoa powder, 2 tablespoons cider vinegar, 2 teaspoons Worcestershire sauce, 1 teaspoon ground cinnamon, 1 teaspoon ground allspice, 1 teaspoon ground cumin, and 1/2 teaspoon cayenne pepper with the tomato sauce. To serve, place 1/2 cup hot cooked spaghetti on each of the serving plates; make an indentation in center of each portion. Top each serving with some of the chili, 1 to 2 tablespoons shredded cheddar cheese, 1 to 2 tablespoons chopped onion, and/or 1/4 cup additional kidney beans.

One thing I have changed in my chili, which I think improves it, is to use Spicy V8 instead of tomato juice as base. I also use more hamburger than beans... just for my preference.
There are several chili recipes from which to choose at site provided below. It really depends on personal taste.
